He was an attorney; she was a teacher. Both sought an exit strategy from those nine-to-five “real” jobs.
When Chris, the attorney, started brewing beer in the couple’s kitchen, Katherine, the teacher, started putting her knowledge of Greek Mythology to work. She named the first beer that Chris brewed from scratch: Persephone.
The beer, named for the Greek Goddess and for its smooth and tangy finish, won first place in the 2013 Illinois Brewers of South Suburbia competition. Chris has gone on to win more than 40 awards from across the country for his beer.
That gave the couple an exit strategy, indeed! In 2015, they started Exit Strategy Brewing Company and opened their brewpub with its on-site brewery.

Exit Strategy Brewing is open Wednesday and Thursday from 4pm to 9pm, Friday from 2pm to 9pm, Saturday from noon to 10pm, and Sunday from 11am to 4pm.
Thirsty Thursdays are a great time to visit Exit Strategy when pitchers are half off!
A full pour of the regular “Mainstay” beer like the Pomegranate Wheat beer called Persephone is $6.50 or $21 for a pitcher. There are eight other Mainstays on tap.
A pretzel covered in salt and garlic oil and served with IPA honey mustard and beer-infused queso will cost you $7. A pound of crispy chicken wings tossed in housemade sauces like buffalo or jerk sauce is $12.
Katherine and Chris Valleau are partners in life and partners in brewing. Both will likely be on hand when you visit Exit Strategy Brewing. Chris is in charge of all things beer while Katherine is in charge of, well, all the things.
Located at 7700 Madison Street in Forest Park, Exit Strategy Brewing is a half-mile walk from the Forest Park Stop on the CTA Blue Line Train or a 0.8-mile walk from the River Forest Stop on the Union Pacific-West Metra Train.
